the greenest soup yet

eating green in 2013: green soup with ginger, recipe found here.

I love it when friends drop by unannounced. The random pop-by always brightens the day, adding a little "zing" when everything is just ho-humming along. I love surprise visits even more when I have something homemade ready to share. Tonight we ate and shared this hearty soup, filled to the brim with greens. Chard, leek, spinach, sweet potato, caramelized onions, ginger, lemon...

Warm, casual, rejuvenating - a cozy end to a brisk Vancouver day.

to bear together

A family trip to VanDusen Botanical Garden to see snowberries in the sun.

///

The hummingbird likes them and so do we - snowberries (the name of the snowberry genus is derived from the Greek words meaning "to bear together") were aglow today in the garden as we enjoyed some outdoor family together time.

///

Soft light, chasing ducks, red noses, frosty botanics - these are a few of the things I will remember about today.

Enjoying the sun at Lynn Headwaters in North Vancouver (with Cuddle Bear).

[*I'm a little ahead again. Good to feel like I'm on top of something as I'm sure the day will come when I'm scrambling to get this done by Sunday!]

glimpses of green

winter in Vancouver.

///

In the thick of it, snow all around, glimpses of green. Today I went for a walk in the woods with a dear friend who is visiting from Ontario with her family. As the sun spread its warmth over the day we lost ourselves in conversation, becoming reacquainted amongst the second growth. A much needed nature fix was had...

Feeling so much gratitude for all that today brought with it.

broccoli pesto pasta

Pasta: a mere condiment for such deliciousness. I used yellow pepper pesto and will add a few red pepper flakes on individual dishes (sparing the baby from a major shock to the tongue). A potential contender for an easy 10-minute go to recipe for 2013.

Do you know where broccoli really comes from?

kale goes crunchy

Possibly not the healthiest way to consume kale/more greens, but definitely one of the most delicious, simple and addictive!

As a bonus, little G loves kale chips too.

green in twenty-thirteen.

simply. more. green.

Inspired by the zestful Eden MacDonald of Feed Life (I attended one of her cooking classes last fall), I'm planning a year full of green for twenty-thirteen! By making changes to my diet I hope to lead a vibrant life, to celebrate the seasons, to feel excitement over upcoming farmer's markets, all the while modelling healthy eating behaviours for our little babe. There are no rules with this plan, just an intent eat mindfully and consume as many whole, plant-based foods as I can. Perhaps 2013 will be the year my skin finally turns a pretty shade of pistachio?
